Have Yourself a Spanish Christmas
Tuck into festive Spanish favourites this Christmas season at Restaurant Gaig, helmed by Executive Chef Marti Carlos. A smashing smorgasbord, from Spanish roasted meats to succulent seafood dishes await diners.

Stuffed spring chicken, filled with goodies
Everyone’s favourite Stuffed Spring Chicken with Pork Belly, Truffle and Nuts ($36 ++) is a must.
Chef Marti stuffs boneless spring chicken with flavourful pork belly, black winter truffle, pine nuts, raisins and dried apricots before oven-roasting and serving it whole with the juice from the chicken.
The Stuffed Squid Stew ($28++) highlights the mar i muntanya — a Catalan-style surf-and-turf preparation.
Spanish squid is filled with minced beef and cooked in fish stock and sofrito, (a Spanish sauce comprising tomato paste, olive oil, onions, garlic and bell peppers). Served with potatoes and crispy squid legs for that oomph.

And if you feel like feasting at home, Gaig’s Christmas Gourmet Box ($150+) is perfect, with festive favourites like jamón, (dried cured Spanish ham) fuet, ( thin, long and dry-cured pork sausage), chorizo (seasoned pork sausage), and Ventresca de Atún, (Spanish-style salad with tomatoes and tuna).

Rolling With The Times
There’s a special touch this Christmas for your Lobster Roll at Burger & Lobster Raffles Hotel.
The lobster rolls in with other delights.
Champagne Telmont-infused butter sauce is served along with the Lobster roll, topped with caviar for the perfect finish. Enjoy it with Champagne Telmont Reserve Brut or Rose.
And for the special holidays, there’s a three-course set menu ($85++) with a butternut squash lobster bisque with garlic toast followed by a B&L Signature Tasting Platter. Seal the deal with a homemade bread and butter pudding.
