Except for her time in school, pastry chef Cherish Finden has always thrived on her competitive streak.
It’s an enduring and endearing feature about her that has brought the cake-meister into the limelight as a chef and resident judge of the popular UK free-to-air Channel 4 series, Bake Off: The Professionals.
Her sweet standing has been well recognised and documented. For the 90th birthday of Queen Elizabeth II, Cherish baked a cake in the shape of Windsor Castle.
And when she was working at the iconic hotel, The Langham, London, musician Lady Gaga was totally gaga over Cherish’s creation for her.
Born and raised in Singapore, Cherish Ng, as she was known then, honed her culinary skills at Singapore Hotel and Tourism Education Centre (SHATEC) and worked in the pastry departments at leading hotels before deciding to find new pastures to layer her reputation with accolades and icing them with awards.

Applying the same precision required for making desserts to her career, Cherish’s path towards recognition was strategic and well-plotted.
Her diligence caught the eye of Peter Knipp, a legend in Singapore’s culinary circles for his work at Raffles Hotel and as the man who put Singapore on the gustatory map with the World Gourmet Summit series.

"He asked if I would like to join his pastry kitchen at Raffles Hotel. Although I didn’t have paper qualifications, that didn’t bother him. He was interested in what’s in my head. He is very demanding to work with."

Baking the basics
While schoolwork was not her forte, the home situation added a more challenging dimension to her young life.

"My mom would give me $3 to prepare a menu for the week."

Rice and omelette would be staples on the menu.
And when there was a bit more money, Cherish would indulge in her mother’s good food.

"I love her Teochew cuisine — comfort food like porridge with salted vegetables, salted egg and ginger with pork."

The disappointment of her academic grades and her early introduction to cooking and planning menus for the household pushed Cherish to leave secondary school and enrol in SHATEC.
To some extent, Cherish began her real-world education at SHATEC.

“I found the pastry kitchen fascinating. I’m not a very creative person, but I associate pastry with art. So, I enrolled for different courses — on sculpturing and creative designing, among others. And I incorporated art into pastry."

"It was one of my biggest challenges, but I like to break the rules."

Her competitiveness kicked into high gear with the added artistic impetus.

"I always want to be the first to create a product. But to create something as part of a new collection, you have to think ahead. You must have a story to back up whatever you create."

During her time in the Raffles Hotel, Cherish saw a long list of Michelin-starred chefs from Europe arriving for promotions. That opened her eyes to other opportunities to expand her knowledge.
Cherish moved to other hotels and opened a cake shop with a partner, supplying to caterers in Singapore. She opted to leave her safe space, sold off her stake in the business and headed to Europe, landing in Paris.
She got a position in the famous macaron shop, Ladurée, but her language skills proved a major stumbling block.
So she crossed the Channel and wound up as a junior sous chef in a 5-star hotel in London.

After that it was off to be a consultant for a department store and work as a Cordon Bleu lecturer. But the hotel environment still beckoned and Cherish found herself in the kitchen of The Langham, London. Here, as fate would have it, fortune favoured her bold approach to her job.
Going Gaga
For Lady Gaga’s visit to London, Cherish brought a garden to her room in The Langham, London.
A carpenter created a 2-metre flower stand in her room, a florist built a garden and Cherish’s pastries were hung on the display.

"She saw my name somewhere and when she came down to the lobby she whispered to me: 'Thank you very much for all the effort you put into my room.' She held my hand and we walked to the hotel entrance, in front of all the media. I became famous because of that."

While she was in The Langham, London, Cherish was approached to audition for a judge’s position for British Bake Off: The Professional. It’s a role she still holds after 8 seasons; a testament to her sweet rise from poor student to master patissier.
One of the key lessons she cherishes is setting goals.
